When I was engaged, a group of ladies got together to throw a recipe shower for me.
It was my mother’s idea.
At the time, I was so all about my red lipstick and Dear Abby and my giant monogrammed train and not so all about cooking.
But I love my mother.
So I went.
Only a little reluctantly.
There were recipes for Potato Soup, Chicken Tori, Chicken ‘n Dumplings, and Ham-Filled Party Puffs, and my mother’s Teriyaki Meatballs.
The ladies smiled so sweetly when they handed those cards to me. Each recipe was hand-printed neatly on these blue checkered cards with chickens, titled optimistically”Good Ole Homestyle Country Cookin.’”
*sigh*
I didn’t want to break it to them.
I wasn’t planning on cooking or baking. And every time I’d get invited to a potluck or a party where I was supposed to bring a dish, I’d pull out the recipe folder and look at the recipes and then put them back because they all looked so complicated. I should have asked my mom if everyone could bring a no bake recipe.
They are the best.
It’s what’s gotten me through a zillion potlucks.
Here are 8 of my favorite no bake recipes.

1. Tri Berry Trifle

There’s nothing better than a recipe with no bake in the title.
Especially when it’s a zillion degrees here in Texas and turning on the oven sounds like the worst idea in the world.

And peanut butter?
And oatmeal?
Yes, please.
My mother-in-law shared this recipe with me and my family loves it and it’s perfect for a treat on a lazy summer afternoon.

4. Skinny Strawberry Smoothie
This dessert is easy and fast.
And icy and cold and yummy.
And it only has two ingredients.

5. No Bake Chocolate Peanut Butter Bars
If you made these no-bake peanut butter bars and brought them to the potluck, and I was there, and I ate one.
We would instantly become BFF”s.
They are yummy and chocolatey and have a little rice crispy in them.

At the risk of stating the obvious?
This dessert is so delicious.
It has graham cracker crumbs and cherries and cheesecake filling and the mason jar makes it even cuter.
